For a reference for non costco bakery folks. 18 pumpkin cans yields 90 pies. So for every 900 pies we use 180 cans (30 cases of 6 cans) What has been a time saver is having a really good electric can opener. Back in the day we used to do it manually.

I like to do 90 per batch. That’s the most we can fit in a bowl. Scrape by hand. You can do 80 per batch with a scraper whip. We have giant walk in freezers we put the racks in when it’s time to cool and just rotate. We bake 72 per rack or 90 depending on the rack.
