I have been trying to find the secret to the most memorable cheese pizza I have ever had. I was just a kid when I would go there, so while I can't remember much, I'm hoping that someone here knows something or someone who can shed some light on the subject.
I can't remember the name or the exact years that the place was in business, but I'll do my best to try narrow it down.
This place was on the top floor of Triangle, on the side with the theater. It was down maybe a shop or two from the candy store, and had a bunch of tables and tall heaters outside. It stayed open a little later than you'd expect, 10-11pm or so.
The thing about the pizza that has stayed in my mind for the last two or so decades were these little... cheese mounds. The tops were always kinda toasted and melty, but on the inside it was this dry, crumbly cheese that was richer and a bit saltier. It was just such a great one-two punch that it has never left my brain. I'm just hoping that someone can help me figure out what it was.
