If I quit my job in January, but COVID-19 has made finding a new job problematic and delayed employment offers, do I qualify for UI?

I quit my previous job for health related reasons, but unrelated to COVID-19 at the time, and expected to find a new role inside of two months from past experience. That went out the window with the coronavirus. I've applied for several roles since, had a few even specify they'd like to proceed but are no longer hiring because of the lockdown restrictions.

I have actually received an offer, but nothing firm yet, and everything is delayed due to the outbreak, stay at home, and so on. I've been waiting about a month now for the paperwork, and my recruiter has provided assurances that the position is still on, but I have no timeline. Given the circumstances, would I qualify for unemployment insurance in the interim? Or would that be a no?
