Storage safety options-dehydration

Seeing as the real dangers from eating come from fungal and bacterial growth, and not the shit itself(assuming the feeder is healthy), would drying it out in a dehydrator aid in slowing it stopping that growth? Would adding nitrate salt like is done to beef jerky also help?
