When I cook, I generally try to look for something new to change my food in a way I haven't experienced before. Of course, different cooking methods and combinations are paramount, but having a ton of interesting flavors to add is almost as important. Also, I'm a pretty avid spice and herb hoarder/user. Do you guys know any interesting rare or exotic spices/herbs that aren't particularly common in the US where I live?
My current spice cabinet includes:
Allspice, Anise, Asafoetida (Hing), Basil, Bay Leaves, Caraway, Cardamom, Celery Seed, Cinnamon, Cloves, Coriander (seed and leaves), Cumin, Dill (seed and leaves), Epazote, Fennel Seed, Fenugreek, Galangal, Ginger, Grains of Paradise, Hyssop, Juniper Berries, Lavender (leaves and flowers), Mace, Marjoram, Mustard Seed (yellow and black), Nutmeg, Oregano, Paprika (Hungarian, smoked, and standard variety), Parsley, Peppercorn (green, black, white, pink, long pepper, and Szechuan) Rosemary, Saffron, Sage, Sumac, Summer Savory, Tarragon, Thyme, Turmeric. I also have multiple types of dried pepper that I often grind into a chile powder. And yea, I have the standard variety of common American household stuff like garlic powder, onion powder, etc.
Things on my list currently: Amchoor, Black Cardamom, Ceylon Cinnamon, Bamboo Salt, Sorrel, Ajwain Seed, Kaffir Lime Leaves, Curry Leaves, Lovage.
Either than these, are there any other good herbs or spices you know of that I could use to improve my spice cabinet and cooking?
