Mother’s Day brunch is at my house. I’m doing a baked potato bar. My daughter’s family is vegetarian, so everything in the meal is as well.
I wanted to offer vegetarian chili as an topping option, but I didn’t have enough time to make a real one. (Chili con Elote from Laurel‘s Kitchen. It’s awesome!) The problem is that the grocery store only had one can of vegetarian chili.
I want to add stuff to this chili to make more of it. I have black beans, kidney beans, canned corn, vegetable broth, and spices that include chili powder and cumin and a bunch of other stuff.
I’m not a creative cook. I can follow a recipe. But this is beyond me.
Any suggestions?
