Any recipes that use Whisky?

My grandfather passed away a few years ago, and he had several part-full bottles of whisky. A mostly full Suntory Toki is the one that I remember, but there are a bunch more, some unopened and some nearly empty. The Suntory in particular is yummy, but I drink maybe a handfuls of times a year, for good reason, and the man was a hoarder. I would die of old age myself before I put a dent in the collection. Any good recipes worthy of having 'the good stuff' used in them?
