Eating vegan food really messes with my digestive system, does anyone else have the same problem? Did you get a diagnosis?

I didn't know where else to ask. So I've tried going vegan 6 times already, not fully vegan this time but I grew up eating a LOT of meat and dairy products (grew up on a farm with 2 hunters for parents) and everytime I've tried, I get the farts really bad....like it smells like someone shit their pants the next room over it's so bad, and like I fart more often. I'm used to being constipated (always dehydrated on top of avoiding veggies for the most part). I feel like there's no balance here. If I eat mostly meat and dairy, my stomach feels fine other than the bloated feeling of being constipated, hardly any gas and the gas mostly has no smell at all. I eat more veggies and bam! Lots of gas, it smells horrible and having bowel movements definitely feel worse than before even though it takes less effort (not the runs, but close to that feeling).

Yeah, I know...see a doc, but I can't right now. I figure someone can give me a clue as to what might be happening with my body re: what I'm eating.
