Hoping to cook steak for my girlfriend and me. She generally doesn't like beef unless it is very tender. Any recommendations on what to do?

As a note, I have only ever cooked steak twice, both turned out ok but nothing to write home about. I have a cast iron and both stainless and nonstick frying pans.
Also, a note: she tends to be pretty sensitive to black pepper.
