Help planning a three course meal.

So as the title suggests I’m planning a three course meal. I’m thinking for the main dish will be a chicken with spinach and artichoke sauce. Followed by something with ice cream. I’ve heard that artichokes are supposed to help enhance the flavor of sweet things like ice cream. So my question is what is something I can do for the appetizer that can help enhance the main dish?
