What to do with Jowl bacon

Ive got about half a pound of Jowl bacon sitting in my fridge that Im worried about going to waste. Im all about a nice fatty piece of meat, but I had no idea how salty the curing makes the bacon. Iām wondering if anyone has any good outside of the box ideas on how to use this meat. I know my obvious options would be to use it to flavor some green beans or collards, but Iām looking for something with a little more pizzazz
