Classic Cookie Issue

Whenever I have tried to make cookies or scones, they always spread. I've been trying to troubleshoot why and have tried different recipes as well.

  • I bake with a silver cookie sheet with either parchment paper or silicone mats.
  • I have an in-oven oven thermometer to check the temperature.
  • I use room temperature ingredients.
  • I put them in the refrigerator overnight before baking.
  • I use the middle rack in the oven.
  • I've once tried baking at a lower temperature than what the recipe calls.
    • Should I try a higher temperature?

At this point, I don't know if its me or my oven. The oven I have has a weird stove top temperature issue where you can't use the dial above 2 or 3 (out of 8) unless you want to burn it.

Any positive advise is welcome.
