I just love making chocolate ganache. Honestly, it's one of those little bits of cooking magic that just works and is nothing but wonderful. Pour hot milk over a bunch of chocolate chips. Hot milk melts the chips as you stir it and as if by magic you have this beautiful smooth shiny melty chocolate. Amazing. And in a jiffy you can mix it with a little butter and sugar and cream and you've got astonishing chocolate sauce that makes any vanilla ice cream proud. I'm never buying chocolate sauce again. Just made enough to half fill my empty Hershey's container, and is it good? Yes it is.
