I'm looking to add some new meals into my basic rotation and hopefully spice up my typical ingredient list. These are the things I already normally work with and I like them because almost all of them I can vary the preparation from 20 min to all day:
Italian pastas: lots of different noodle types (sometimes home made) , usually a red sauce, occasionally a white sauce, variety of meats or meat balls, baked vs stove top, etc. E.g. would include a spaghetti ragu or a baked ziti.
mixed green salads : we love a good salad with a mixed green base. We like to try different cheeses, raw veggies, and nuts. Occasionally will air fry some veggies instead. Usually have a mix of store bought and home made dressings.
grilled "sandwiches" : paninis, grilled cheeses (with a home made tomato soup), burgers, or even a cold cut.
glorified stir frys : I like to experiment with sauces and have a few different sesame oils (Korean, Chinese, etc.) and soy sauces that I use as a base. I usually include rice and then add in all sorts of things: tofu, chicken, peppers, tomato, bell sprouts, etc.
Mexican food : we love Mexican food in this house. Quesadillas, tacos, burritos, enchiladas, chilaquiles, etc. We have a decent Hispanic grocery store near by so we can usually get good spices, queso fresco, etc.
To add on I have basically all the usual kitchen appliances: pans, dutch oven, griddle, gas range, blenders, slow cookers, air fryer, etc. I also have a couple of picky eaters in the house so I tend to avoid seafood heavy dishes or just a big hunk of meat (i.e. no steaks...)
Looking through old reddit posts of "staple meals" I see a fair number of stew/chili and roasted veggies with chicken (not sure if this would go over with my no big hunks of meat crowd) suggestions. I am however a total stew/chili novice and don't know where to start. I also see quinoa pop up constantly, but don't really know any staple quinoa dishes or how to add in variety for them.
