Insane title, I know. There is a diner near me that serves Mexican and American food. They have a rice and beans bowl that has this delectable acidic zing. Its light, really hits the mouth, and goes so well with fresh pico de gallo. Makes you salivate and want another bite immediately, like any good slightly-sour ingredient does. Does anyone know what this ingredient is? I’ve certainly tasted it before, maybe at Chipotle or some Mexican restaurant. I don’t think it’s lime juice because it isn’t fruity or citrusy at all. This feels really important to me as I have the cilantro soap gene and adding this to my home cooking would make me so happy lol.
