Kashk bademjan, without nuts

So a good friend of mine told me to try this dish. And it looks amazing, but I want to make it for a gathering, and some of the people are allergic to tree nuts
I want to keep a similar flavor but struggling with a good substitute. I was thinking medium roast ground whole bean coffee, any ideas would be greatly appreciated
