If you’ve ever had them on a chicken sandwich, they’re fantastic. The MF website describes them as a “one-of-a-kind crunchy, herby, buttermilk-polenta topping.” The ingredients listed include buttermilk, polenta, Parmesan, and herbs.
I’m assuming they’re using buttermilk powder, since wet polenta doesn’t really make sense to me here. Other than that, my thought was just to mix the ingredients with a bit of oil and bake on some parchment.
Any thoughts? Has anyone tried to do this before? The only copycat recipe I can find online uses breadcrumbs and that seems like a copout.
