I have this idea for a pork tenderloin recipe, and I was looking for recipes where they put it in the oven. I want to smear it in some binder like mustard and bombard it with spices, though every recipe I can find says you should sear it in the pan beforehand. However I feel like that would mess with the spices and create some sort of crust, while I want the spices to sorta seep into the meat while staying somewhat moist.
Does anyone have/know about any recipes that do this? Or does anyone have any tips/advice?
