Cooking burgers. Chuck? Or brisket and chuck combo? What's best?
Post Body

Greetings. Thanks in advance for any replies.
Looking to make a good smash burger. At the butcher, I have two options.
a) Buy a chuck steak, and butcher will put it right through the grinder - I'd then spice / form my own patties.
b) At the butcher they also sell 4 burger patties spiced / mixture of chuck / brisket meat.

Which will make the better juicy/fatty burger?

Thanks!
