I have a large jar of sun dried tomatoes that has been sitting in the back of my cabinet for about six months now, maybe a bit longer. It has been opened once to use a few tomatoes for pizza and was put back in the cabinet and never touched again. All of the tomatoes are completely submerged in the oil they came in and have only been opened that one time and the expiration date is still ~2 years away. Did the jar HAVE to be refrigerated or are they still fine to use? It says "Refrigerate after opening" on the bottle but so does soy sauce so I never know if it's actually true/necessary. I would get more but the stores near me are all out right now for some reason and need to make a couple of pizzas tomorrow and that's my favorite topping.
