I have 4 quarts of frozen vegetable stock (largely just onion, carrot, celery with a little garlic, tomato). How would you use it? What dishes benefit the most from it?

To me, the stock tends to run a little sweet. I’m new to this, so I’m I’m unsure what it’s supposed to taste like. The carrot is more pronounced than I would’ve expected, though.

Knowing this, where would I benefit most from using it? What are your favorite vegetable stock dishes? The time before when I made vegetable stock, I made hot and sour soup. That worked well (stock had the same sweet flavor, but the end result didn’t taste overly sweet). But I want to try something new.
