Single cup v60 troubleshooting - oddly bitter

I've been using the single cup Rao method (at least as described here) for single cup v60 pourover, and it was all good until today, when even after a second cup it's bizarrely bitter! Water set to 207-209 f, Baratza grinder on 17. All beans are from Stumptown and were roasted within the past month. The only change I can think of is that I'm using a Rwandan bean today, and prior I'd been using either a blend or a Guatemalan bean.

After bitter cup number 1, I notched the grinder up one and put the temperature down two degrees f. The second cup is a little better, but still bitter. Any advice on how to fix?
