Why do people pre-plan roads in a grid fashion and level land?

I'm about to sleep (I have been very busy and being a producer means staying up to terrible hours cranking out audio) but why do people build grid cities and flatten land?
Seriously. After getting rightfully dogged on for the past...4 years....people still do it. Why? Are they sick?
