I was just suggested this page. So many great charcuterie boards!
Before charcuterie boards started to be popular I worked at a restaurant that had one on the menu. We would house make 2 types of brat types of sausages each week. All the meats were house made and cured. The cheeses came from a local cheese munger. The sauces and different types of bread and crackers were made on house.
I was trying to find a picture from our boards, instead I ran across this gem from 14 years ago. Very poor picture quality. It was from a culinary competition. We had to create a charcuterie board in the classic style such as patté and taurines Everything besides the bread had to have aspic (like a glossy jelatin) covering it. It's nothing at all like the charcuterie boards we enjoy.
The board itself was the main reason I wanted to show this picture. Our board had to be a certain size so we had to make our own. It was made out of a round table top from home depot. We cut it ourselves, then spent hours hand standing it, staining it, and polyurethaning it, then we put it together with some dowels.
