Ran out of casings for dry cured salami

I ran out of casings for some salami I'm making. I know you're not supposed to eat it "as is" since the cure #2 hasn't had a chance to break down yet. Anything I can do with it? I ordered more casings, but they won't be here until Monday. Should I just freeze and stuff on Monday?
