Is this normal behavior for a newly adopted cat?

I just adopted this lil tux yesterday. He is almost a year old and was surrendered by his last family. He is fixed.

He does not like being picked up but other than that he’s a huge love bug. He loves to rub up on everyone and give head butts. He gives some kissys and nibbles when he’s overstimulated so I know to stop petting him. He also constantly just flopping on his side exposing his belly, but doesn’t like it touched, he will kick your hand away.

He hasn’t been eating as much as I would like. His foster mom gave me a ziplock of the food she fed him but he won’t look at it. He did eat a little of the kibble I bought but only if I put it on the floor, he will not eat it off the plate I bought which is shallow but not elevated. He is using the litter box but only to pee so far. And has drank a little bit of water from the fountain.

He plays and used the scratcher I bought and has used the bed I bought although he prefers the blanket with my scent on it. He likes sleeping under my bed, which is pretty raised so that’s where I put the blanket and bed.

He is constantly purring, and I know cats can purr to self soothe and he just does not stop. I’m worried that he is super stressed since I know adoption is a big change.
