Am I able to restore this, and is it safe to use in the meantime?

I inherited this from a family friend, not sure if it’s ‘real’ and not sure why it looks so gray all of a sudden.
First two pics are right after cleaning, last is after seasoning.
I don’t clean it often and when I have, I only use salt and a little bit of warm water. Is that why it likes like that?
Any advice would be greatly appreciated 💗🕊️
