I just got done refinishing a BSR chicken fryer and it ended up splotchy on the inside walls

Is this anything to be concerned about and how can I avoid doing it in the future? I use vegetable oil at 500°. Did I leave too much oil on it or is it just having trouble holding a seasoning? This is my first time actually refinishing anything besides a lodge so I wanted to make sure I wasn't messing it up
