1993 Toyota Corolla, oil temp problems?

My has recently started having a problem where it'll take an unusually long time to warm up. If I so much as switch the AC dial over to heat, even if I don't have the fan on at all, I can watch the oil temp drop. Once it drops too low, the check engine light will come on and it'll die.
