I've googled around and not found any recipes for jerusalem artichoke* from any trusted source. Is there perhaps any recipe somewhere in a Ball book or anything like that which I don't know of?

*(I'm Swedish and we call it jordärtskocka, I'm not sure which one of all the names to use; wikipedia gave me all the names in the title)
