Can you can sundried tomatoes in oil?

Just out of curiosity, I’ve been drying tomatoes in the sun and found an Italian recipe that says to boil them for a few minutes in a 50/50 vinegar water mix and then store them in sterilized jar, under olive oil, with a short shelf life in the fridge. But what if I want to store them longer term or ship them? Can you can them in a water bath?
