How to Properly Flavor Chocolates?

So I've been teaching myself how to make chocolates. I've been using the Ghiradelli melts but last night, I used a different brand and it seized up really bad. I think I did something wrong because my future mother-in-law did some research and found that if you add liquid, that can cause seizing. The Ghiradelli melts didn't seize like these new chocolate melts did and I had used my liquid flavoring with no issue until now.
I've done my research now and I'm going to get some Wilton EZ Thin but now I want to know what's the best way to flavor my chocolate. I've been using LorAnn brand flavoring but I'd like to know if there is anything else I can use to give the chocolate some flavor.
