Toffee questions

I’m using a toffee recipe for a 9x9 pan. Any issues I should be aware of if I quadruple it for a larger pan? Also, I plan to give the toffee as gifts. I’ll be storing it in Mason jars. How long can I expect it to keep? Thanks for your help!

Just remember that dealing with huge volumes of boiling sugar that needs to be constantly stirred can be unwieldy. Your pot needs to be enormous. It’s heavy to lift and pour consistently when it’s hot. And if you mess up, like scorch/burn the bottom or cook too long or not long enough, that’s a whole lot of wasted ingredients. I have made large amounts of candy before for gifts, and I’m planning to again this year, but I prefer to do it in several small batches, for those reasons I listed. Good luck!
