Woodwind pro cooking too fast?
Post Body

I converted from a traeger to a woodwind pro, and I love the smoke box option, but I have noticed that, despite temperatures being verified as correct, it seems to cook briskets WAY faster than usual. For example, if I did a 225 deg smoke on my traeger it would take easily 12 hours, whereas that same brisket seems to finish within 6 on the woodwind pro. Has anyone else noticed a significant speed up in the cooking process? I would prefer it to go slower so I can really get some smoke going in there.

Comments

No, that hasn't happened to me. I also moved from Traeger as well and have a little over 10 yrs smoking experience. There's definitely something going wrong with your cook because at 225F, there is no way that you can cook an entire brisket in about 6 hrs. Are you cooking the same size brisket? Is your thermometer reading correctly? Are you placing your brisket right over the firepot? Is your smoke box flaring up for whatever reason? It could be a number of different things and I suggest doing some troubleshooting to find the culprit of what's messing up your cook.
