Help finding a bike for a new rider

I have always wanted a cafe racer style bike but I don’t have the technical know how or the money/tools/time to build my own. It seems most cafe racers are custom builds and if I’m able to find them for sale they are extremely expensive. Is there a bike that I could start with to learn working in without doing a full build but still have a similar look that I want without a lot of modifications?
