Dragon tattoo bike, cafe racer ergos?

Iām building a cafe racer and am deciding between clip ons with rear sets or a straight handlebar with stock foot pegs. My bike is going to be somewhat practical, so Iām leaning towards the latter, but Iām also tall and might want to move the pegs anyway. I like this bike but wonder how practical that riding position is for dirt roads? What do you think?
