C25K - What is a good diet to adopt?

Like others here, I'm taking up the Couch-to-5k as a means of getting in shape and living better. Part of that is figuring out how to change my diet. Some of it is easy - drop the junk food (I love me some nachos) and eat healthier.

But in training for this, are there guidelines for certain things I need to keep in mind? I assume protein, but I'm by no means a dietician.
