Question to the old-school and experience cutters. What would yall say is a great brand of knife that doesn't cost an arm and leg to build a set on? I've been working in the meat depth for about 2 years but never been given the opportunity to start a full on cutting apprenticeship yet, it's hard to come by at the places I've worked at yet. I'm likely going to step back into the cutting room again, but this time I want to show up looking more prepared and eager to step up into a butchers apprentice. I've done cutting on poultry seafood and pork but not too much on beef yet. I've looked at wüsthof knives and tried one of my former co workers wüsthof knives and it was nice imo. Are there any other good bang for your buck brands yall can point out for me? Besides the basic victoronics and mercer knives?
