First time using a preferment (mistakes were made)

New to baking, and this is the first time I’ve tried using a preferment (poolish)

I think I used too much water because my dough was just wet, sticky, runny slop when it was supposed to be ready to throw in the oven. Either that or it was WAY over proofed because i foolishly used fast acting yeast instead of active dry. I basically had to redo everything to fix it

Took me about an hour of conservatively adding flour and folding to turn the slop into useable dough, and another two hours for it to proof again

It ended up being a whole day process, but I’m really happy with the outcome
