Breadmaking tips, basic of basic

Just bought a breadmaker at the thrift store and made about 3 loaves in 2 days, some were softer than the others, darker and lighter. I have no idea what makes them this way, if anyone has any basic tips or simple recipes to give me so i can try these out and learn that would be fantastic! Should i wait before taking the bread out, how do i determine if its done properly, pretty much anything
