HELP, Best Leather for Cuffs, Collars, and Harnesses ???

I am looking to get into the leatherwork field. Interested in making cuffs, collars and harnesses. Can any experienced people direct me to the best size or weight leather to use for such items that would not be irritable to the skin for long term wear and also has some flex to it for comfort?!!! Also would need to know what to use for sewing leather pieces together!!!
