Transportation from Suvarnabhumi into BKK City Center Help

Hi all,
I am planning to visit bangkok in october for the first time! and I am flying in from HK. I plan to stay near Siam Square or near Khaosan Road area. Currently the best flight that works for me is flying from HKG to BKK on Emirates, but that flight lands close to midnight BKK time and it is quite late.
Questions are:
- How convenient/much it is from Suvarnabhumi into the city at such late hours? Do we use Grab/call taxi locally?
- another note - how long does it take for immigration there?
- if this is too long, is flying into Don Mueang easier to get into the city?
- Do most hotels near the popular tourist areas have 24h check in? how late do things close there?
