Game keeps crashing! Can't figure out why (not new to patch)

As the title says.
For about 10 days now (my sense of time is terrible but to clarify it's not a problem of this latest patch and I had hoped maybe it'd fix it but NOPE) my game just keeps crashing! I manage maybe 20 minutes gameplay (maximum got about 45, one time only managed 7) before it just disappears. Either goes straight to desktop no warning or a get a DirectX error message (error: dxgi_error_device_removed)
Before this I had nearly 200 hours of gameplay with no real issue.

I've removed all my mods. Uninstalled. Reinstalled to a different drive. Reluctantly upgraded to Windows 11. Tried every suggested fix I can find and it just keeps happening!
I am beyond frustrated at this point. Had a mate who works in game development looking at the crash logs and they can't figure out what is going on either.

The weirdest thing is, I'm not only having this issue with BG3. I'm having exactly the same problems with Fortnite. Can't play for more than 20-30 mins without crashing, sometimes to the same Direct X error messages. BUT. Every other game I've been playing has been fine? Hours of FFXIV- no problem! Destiny 2 all night? Quite alright!
What is it about these two games that my PC is having such trouble with, but seemingly nothing else?

If anybody has any ideas I'm eager to hear them! BG3 has been a happy place and distraction and cheer and I want it back!
