Ingredients: One 15 ounce box of cake mix. 3 eggs. 1/3 cup of oil or butter. I used coconut oil. 1/3 cup of water. Choice of sprinkles/sugar.
Preheat over to 350 degrees F. Beat the ingredients until well mixed. Using a 1/4 cup, scoop a blob out. I got large 12 cookies out of it. Bake for about 12 to 14 minutes.
Since they're thicker, they took a bit longer than other recipes.. but pull them out when they just begin to golden on top.
Story time:
The other day, I was reminded of Amish sugar cookies. I grew up in that area and they were always my favorite cookie. Like part cake, part cookie.
So I Googled and found a post in here and a ton of other recipes about using cake mix to make cookies.
Most called for 2 eggs and 1/3 to 1/2 cup of oil with one 15 ounce box of cake mix.
For some reason, that didn't feel right when I mixed it. Like it wouldn't end up like the Amish sugar cookies..
So I added a 3rd egg and some water and this is how they came out.. and to me, they're all but spot on to how I remember them.
My daughter did the one tray, but I think I'll add more sugar on top next time. I'm typically my biggest hater, but these were worth sharing.
