What length touring ski should I get?

Hi all, I’m buying my first touring set up and am going to get a pair of the moment 108 wildcat tours. Firstly, has anyone used them and can you tell me your thoughts? Secondly, I’m not sure what size to get, any advice?

I’m 6 foot 1/186cm (weigh 86Kg) and am more focused on the downhill but am not an aggressive skier. I won’t be using these skis in bounds, apart from maybe a few laps here and there. The skis are available at 190, 184 and 179.

Edit: I’ve also got a 2011 Mammut beacon, what are the odds that I’ll still be able to use it? Has the technology improved much in the past 11 years?
