Iā€™m Cuban-American and I have cooked pigs on caja chinas before and always use more or less the same mojo for injecting the meat and marinating. Now Iā€™m cooking one up for an event in November but I wanna try something new and change the flavor of my mojo. I think I want to go sweeter and use guava somehow. Does anyone have any ideas how I could incorporate that? Maybe like a guava bbq sauce baste at the end for the skin? All help appreciates
