Iām Cuban-American and I have cooked pigs on caja chinas before and always use more or less the same mojo for injecting the meat and marinating. Now Iām cooking one up for an event in November but I wanna try something new and change the flavor of my mojo. I think I want to go sweeter and use guava somehow. Does anyone have any ideas how I could incorporate that? Maybe like a guava bbq sauce baste at the end for the skin? All help appreciates
