Buddy, even on the consumer side it's 10.83lb online for American Wagyu and I guarantee you're paying less than that. You're looking at 600% mark-up at least. Restaurant mark-up is supposed to sit around 200-300%. You're not serving gold.

You were probably looking at prime and TX is nowhere near as cheap for beef as you'd think also drastically varies by county, state, etc. At least for pricing and quality. One butcher, market or whole seller etc maybe be like $3lb for choice another may be $20lb it's genuinely that sporadic especially if you consider Sales. But averaged out across the US you can 100% get 2 briskets for that cost for Choice and if you inject tallow Choice is gonna come out like Prime tbh.

They're charging like 600-800% mark-up, regular mark-up is 200%. 300-400 would make sense double that doesn't. It's practically robbery lol.
