So I have a masterbuilt electric smoker and I’ve used it several times following guides/recipes and for some reason my ribs or even beef brisket have this off taste about them. I can’t describe it but it’s not good. I don’t think it’s the meat itself but probably the process giving it this taste and I’m not quite sure what it is cause I’m new to this. Any ideas? I’ve tried different wood chips. I’ve varied the temps. I have a MEATER probe too and cooked to the recommended temps. For example on the brisket I cooked to 165f then wrapped and cooked till 205f. Came out decently tender but still a weird taste.
