I'd like to know what the official correct spelling of the name is.
Streaming the movie on Disney's platform, the closed captions spell it Seyzey both when Neytiri introduces Jake to the Ikram and when it dies during the battle scene.

But when I see it written in fandom and wikis it seems to always be spelled Seze.

I searched for the scripts online expecting they'd have the name written in them with pronunciation guidelines being Zoe says it in three of her lines. But most versions published don't include any of the three times she says the name. Dialogue scripts / transcripts that I found only include the line during the battle scene where it is killed and Neytiri screams the name but not the lines when she introduces Jake to the Ikram earlier on; all of those I found spelled it Seyzey.

Based on her saying it I had guessed "Sayzei" so when I then turned the subtitles on so I could be sure, Seyzey made sense. Then I later saw it written in wikis fairly consistently as Seze.

Why the inconsistency and which spelling is correct?
