how do I change the text in a text file on my phone?

So, say I have a .txt file saved on my phone. Let's call it help me.txt

And the contents of it are:

"This is an example I am making up to ask a question on reddit cause I'm not getting anywhere fiddling with various blocks on my own which is unsurprising since I'm basically learning coding from scratch'

Easy mode question: how do I replace those contents completely with, say " replacement text example"

Hard mode question: how do I use the WHERE function to only replace the word "example" with um... "Automate is a cool app"?
